Mike is a native of St Petersburg and gained much of his 25 years’ hospitality experience in reputable chains such as Hooters, Steak & Ale and Outback Steakhouse. At Outback, Mike operated 15 restaurants with a staff of over 1,400 employees and 65 Managers. Under his leadership, his territory on the West Coast of Florida increased store sales from 41.3 million to 49.8 million in three years. At the end of Mike’s 16-year tenure at Outback, his total unit sales represented 63 million and was the highest performing region in Florida.
Mike’s next challenge was to revitalize the brand and grow sales for an underperforming restaurant in downtown St Petersburg. After relocating the restaurant’s location to Beach Drive, Bella Brava is now a thriving restaurant and has increased sales from 1.3 MM to 4.4 MM annually in just 4 years. Mike brings his years of experience and vision to making 3 Daughters Brewing a place anyone can come to enjoy a great craft beer.
Owner / Sales & Marketing
Leigh started her career at Steak & Ale working in restaurant operations until she was promoted to regional training manager for the Southeast Region. She focused on development and implementation of training materials and programs for an area with over 2,000 employees, 150 managers and annual sales exceeding $48MM.
Leigh moved out of the hospitality industry and into professional services with GE Capital Consulting and spent over 18 years at various IT firms in sales and marketing roles. She gained valuable experience working for notable organizations such as Tribridge and Zymphony Technology Solutions. At Zymphony, Leigh was Director of Creative Services, leading a marketing team that executed on internal and customer campaigns. At 3 Daughters Brewing, she returns to the hospitality industry bringing years of marketing and business savvy to promote our great tasting craft beer to distributors, retailers and consumers.
Ty is the Head Brewer and brings his considerable creative talents to each of the 3 Daughters Brewing craft beers. Ty has shown his culinary skills by creating innovative menus for highly successful restaurants such as Outback Steakhouse and Bella Brava. Early in his career, Ty worked full time while he earned a degree in culinary arts. His hard work was realized at Outback as he was promoted to Kitchen Manager and eventually Regional Food Tech for 9 stores. His years of training and working in restaurants allows him to design original, fresh recipes whether for a food menu or a new craft beer.
During the years that Ty refined his skills around menu creation and kitchen execution, he also developed an interest in craft beer. An avid home brewer, he began creating craft beers in the restaurant to complement his menus. In addition to adding zest to dishes like beer battered fish, his craft beers served on tap grew to represent 30-40% of all beer sales. Today, Ty’s distinct and cultivated palate allows him to formulate interesting and adventurous taste combinations. With an unparalleled passion for craft brewing, Ty has translated this gift into 3 Daughters Brewing beers; they are complex, authentic and elegantly crafted.
Director of Quality Assurance
Desiree Chubb, a Bradenton resident, is the Director of Quality, Chemical Hygiene and Safety at 3 Daughters Brewing Company in St. Petersburg. It was the science that attracted Desiree to the position, which she landed after completing an internship in the newly established quality lab. Desiree’s role as the laboratory director is to ensure that 3 Daughters Brewing products are both consistent and high quality.
Desiree, who has a background in business, spent ten years in investment banking and management before returning to college to study Natural Sciences. She first graduated in 2001 after studying business, graduated again in Fall 2015 with a degree in Biotechnology and now has finalized a degree in Biology with a minor in Chemistry at University of South Florida St Petersburg. Desiree also teaches analytical laboratory techniques in the USFSP brewing arts certificate program and supervises interns from several local colleges. She was a top four finalist for Outstanding Graduate, was awarded the Biotechnology student of the year award and was a member of Phi Theta Kappa for her superior academic standing. She continues to serve as an active industry partner at SCF. The mother of four daughters, including triplets, Desiree is proud to serve as a role model to her girls.
Brad is a native to St Petersburg, and he joins 3 Daughters Brewing as the Logistics and Warehouse manager. In this role, Brad works with our strategic distribution partners to ensure optimal customer service for all retail accounts. He is responsible for overseeing inventory levels, assuring quality standards in the warehouse and streamlining delivery process with our distributors.
Prior to joining 3 Daughters Brewing, Brad honed his management and leaderships skills during the 19 years he worked for the City of St. Petersburg in the Parks & Recreation Department. He was responsible for staffing one of the largest recreation centers in St Pete with 26 staff and over 500 kids annually. His achievements include implementing innovative staff training programs and youth athletic leagues, increasing efficiency in after school programs and serving on multiple committees to create better programs for various departments.
If you come to the tasting room in St. Petersburg you might have seen Jessica behind the bar or coordinating an event. Jessica entered the work world at the age of 19 working with the City of St Pete in the Recreation department. She worked there for over 10 years and became the supervisor of the teen program overseeing over 100 kids. She thinks out of the box and works well under pressure- Jessica is invaluable to the 3 Daughters Brewing team.
Since joining the 3 Daughters Brewing team Jessica has developed an incredible charity program that we are extremely proud of. In 2017 we set out a goal of donating $100,000 to over 100 different local charities. With Jessica spearheading this campaign we exceeded our goal. We ended the year participating and donating to over 125 charities totaling $125,000.
Director of Operations and Administration
Susan started her hospitality career with Outback Steakhouse in 1999. She was in restaurant operations for 8 years moved onto the catering team and then on to the Corporate Office in Tampa where she worked in Marketing and Customer Service. Susan was with Bloomin’ Brands for over 15 years.
Susan has been with the brewery since the beginning. She handles payroll, HR, ordering almost everything from grain and hops, to cans to merchandise – anything you can think of Susan can do. She’s the backbone of our administrative team and we’d be lost without her.
